Harvest topic: Best tip for peaches EVER!
The lady where I buy peaches told me this trick, I verified it on the net and combined the information and will tell you what I did.
The orchard lady said she puts them in a paper bag, rolls it down tight and freezes them whole. When she wants a peach, she pulls it out, and the peel washes off. Then she slices it and lets it thaw a bit.
The internet had someone saying they put them in sandwich bags and freeze them, otherwise the same.
I have one of those vacuum-sucker deals, and some of the baggies that goes with it. I put about a dozen peaches in a bag, sucked the air out but did NOT pull until the peaches were under pressure, and tossed it in the deep freeze. Now, that was only three days ago so I do not know how long they will keep. I did pull one out a minute ago, and indeed, the peel washes right off. Near the seam in the peach it was a bit sticky, but it was MUCH easier than the boiling / ice water dip, peel, slice, dip in lemon jiuce, drain, then freeze / dry / can whatever. I mean I did NOTHING, not even wash them. I tossed them in plastic bag, sucked the air out and froze them and the one I just ate was YUMMY. Beautiful color, and even the texture was good although still a bit frozen - I like them that way.
For those who worry about power outages, you can still can or dehydrate them later if that happens. But where I can only can, freeze and dehydrate so fast the old way, I will be tossing a hundred pounds into the freezer in about 2 hours today. Oh, yummy peaches all winter long!!!!

If you have an ice cream maker, using frozen peaches is better than room temp because the peaches won't be all crystallized at the end:
Ben & Jerry's Fresh Georgia Peach Ice Cream
2 cups fresh, ripe, very small peaches, finely chopped
[Use frozen, chopped peaches instead]
1 1/4 cups granulated sugar
Juice of 1/2 lemon
2 large eggs
2 cups heavy or whipping cream
1 cup cold milk
1/4 C cold peach nectar
Combine the peaches, 1/2 cup of the sugar, and the lemon juice in a bowl. Cover and refrigerate for 2 hours, stirring the mixture every 30 minutes.
Whisk the eggs in a mixing bowl until light and fluffy, 1-2 minutes. Whisk in the remaining 3/4 cup sugar, a little at a time, then continue whisking until completely blended, about 1 minute more.
Pour in the cream and milk and whisk to blend.
Add the peach nectar and blend.
Transfer the mixture to an ice cream maker and freeze following manufacturer's instructions. After the ice cream stiffens (about 2 minutes before it is done) add the peaches, then continue freezing until the ice cream is ready.
Ooooohhh - I made nectar this year too!

And, I forgot to add that this recipe is for the 1.5 quart capacity ice cream machines.
Make sure all ingredients are wicked cold before adding to machine.

Anything that
develops freezer burn can be frozen in a little water in a
plastic bag. The water keeps the oxygen away. Works
for chicken and steak too.

Now for the next question...
We have property with 8 tall and large peach trees 10-15 feet tall. Every year they are ripe with buds, and in turn peaches. The peaches get about half size and fall off of the tree hard as rocks and all that is left after decomposition is the seed. Any advise on how to get a good harvest in the Southern states, or am I facing a blight or bug as my culprit?

Do you thin your fruit? Did you notice a fungus?
I had 2 trees that did the same thing 3 years straight. Last year I cut them down, and replanted new trees about 200 feet away. I had a fungus in them that I couldn't get rid of.
Also if you don't thin the fruit some here in alabamastan, it is so hot and humid in the summer that it is a good spot to grow fungus.
Also try to prune them so they look just like an upside down umbrella, to let light and air in.
Was the peach, a good one for your zone? A lot of peaches need more "chill hours" than we get down here. You may want to look into getting trees that are rated for zone 8-9.
Look here they have good trees, if you can't find a nursery that GROWS, not sells trees locally.

My folks had a nursery when I was a kid, they always ordered their trees from Starks, higher cost but better results.

yes, and I was also told ... buy a dozen carton of berries when they are on sale and freeze them for smoothies later. Now, I may be stating the obvious, but sometimes we have to be reminded ;-)
Well, I just found out it works for tomatoes too.
Man, one little idea and your whole life changes... I am half serious about that. I am going to a wedding right as my tomatoes are coming on, thought I would lose half the crop because I don't have time to make sauce and salsa... I can make it later! I will be able to get a weeks worth of "canning" done in an afternoon.
I am a happy little chicken rancher this morning, let me tell you.

More simple, if you will only be freezing them in Foodsaver-type bags, is to check into the guidelines on blanching fruits and vegetables before freezing.

I did the same thing this year
My tomatoes came on slowly..not enough to work with. So I froze
them..just cored them and froze them in bags.
I'm going to pull them out later when I have enough to can up a large batch
of spaghetti sauce. :o)
