How Secure is the Voting System in Texas?

Texas uses 3 methods to vote

Obviously Texas is a Republican stronghold.... this is
their turf so they would have the most to gain in defrauding/skewing the numbers and "hacking" the count.

Are there any public watchdog .orgs in Texas... what are their plans?
I found NOTHING in my search.

I know in my county we hand count the votes with republicans and democrats in the same room.I do know one of the election officials but I would still say that anywhere there a voteing box I think we should have a pen and tablet so people can show they voted.
