My favorite garden / food storage tips

Freeze roma tomatoes whole. When you want to make marinara, just put them in a slow oven (265ish) in a cast iron skillet for an hour until they sweat off their moisture and dump the watery stuff off. Then let them cool enough to handle, and peel the skins off. Mash the rest well, and add the rest of your ingredients. It might work for any tomato, but I LOVE romas so that is all I freeze.

Freeze peaches whole. When you want to make peach pie or a peach smoothie, wash it under hot water, and the skin will slip right off. If you slice them up and eat them still slightly frozen, they are as good as fresh. If you let them thaw fully, they will be mushy, but they are still great for cooking.

I used to can both of these things, and it meant working in a steamy kitchen in the heat of summer. Now, I throw it in the freezer and make stuff "fresh" all winter long instead.

Bay leaves in your wheat / flour will keep weevils out of it.

Calendula can be soaked in oil and used on cuts, bruises, etc. It can be soaked in alcohol to make a rub for strained muscles, ligaments, etc. It keeps a host of pests away from your garden while it sits there growing medicine for you. And it is just the happiest little flower face you could ask for.

Anybody else got any tips for making gardening / preserving a little easier?

Oh! To those who wonder "What will she do with her food if the grid goes down?" I will either dehydrate it if it is summer or put it out in the snow if it is the winter. I still do other canning and drying, but the peaches and tomatoes used to be hours and hours of blanche, ice, peel, pare, process - now it is bag it, freeze it.

I am enjoying my berrys:

I picked and froze so many red raspberries this past season, I don't think I will be able to use them all.
My friends always tell me I'm nucking futs for all the time I put in to it, but a few were visiting yesterday and I was kind enough to share some with them over home made ice-cream.
I don't believe there will be any more of their loving laughter this year as I make another attempt at getting my share.

I use tarps

I use tent pegs to attach it to the ground.
Then I use siccors to pop holes in the tarp.
I just dig out the holes and mix top soil and manure with the native soil.
This provides a season of weed-free gardening.

I also like to freeze my bell peppers.
