Japanese Natto, Nattokinase & Vitamin K2 (Resource Library)Submitted by stillwater on Mon, 03/05/2012 - 08:36
This post is a video and article compilation of the history, health benefits, and preparation methods of the Japanese fermented soybean food known as natto. Natto contains the highest amount of vitamin K2 of any food, and has been shown to have many profound health benefits. After you have watched a few videos about natto, you may want to jump to Dr. Mercola's interview with Dr. Cees Vermeer, who is the undisputed world's expert on vitamin K. Dr. Mercola summarizes this interview in the accompanying article. For further information about vitamin K, refer to the extensive article from the Western Price Foundation. For further in-depth information about natto, refer to the book, "History of Natto and Its Relatives (1405-2012)," by William Shurtleff and Akiko Aoyagi. It is the most comprehensive book ever published about the history of natto. A link to this free 656 page book has been included. A link has also been included for Dr. Mercola's free 12 page report on natto.

“You may not yet be familiar with natto -- sticky, fermented soybeans that have been compared in flavor to Roquefort cheese -- but this superfood has been a tradition in Japanese cuisine for more than 1,000 years. And you owe it to your health to give it a try.
In ancient times, anecdotal reports show that natto was used to relieve stomachaches, the flu, and to help pregnant women give birth. The nutritive value of this food was so high that Samurai consumed it on a daily basis, and even fed it to their horses to increase their speed and strength.
Today natto is receiving worldwide attention for its role as a functional food that may ward off cancer, heart disease, osteoporosis, and much more.” Continued...
History of Natto and Its Relatives (1405-2012) - “This is the most comprehensive book ever published about the history of natto or its relatives. It has been compiled, one record at a time over a period of 35 years, in an attempt to document the history of this fermented soyfood. It is also the single most current and useful source of information on this subject.”

“In 1945, Dr. Weston Price described "a new vitamin-like activator" that played an influential role in the utilization of minerals, protection from tooth decay, growth and development, reproduction, protection against heart disease and the function of the brain.”
“Using a chemical test, he determined that this compound—which he called Activator X—occurred in the butterfat, organs and fat of animals consuming rapidly growing green grass, and also in certain sea foods such as fish eggs.”
“Vitamin K2 is produced by animal tissues, including the mammary glands, from vitamin K1, which occurs in rapidly growing green plants.”
“A growing body of published research confirms Dr. Price's discoveries, namely that vitamin K2 is important for the utilization of minerals, protects against tooth decay, supports growth and development, is involved in normal reproduction, protects against calcification of the arteries leading to heart disease, and is a major component of the brain.”
