I quit eating wheat about two weeks ago. The *results have been remarkable: greatly improved short-term memory, better vision, much less irratibility, improved muscle tone, better concentration, and LOTS of energy.
WARNING: If you go off wheat cold turkey, expect muscle cramps throughout the body and depression during the withdrawal period, UNLESS you take 600mg of magnesium or two tablespoons of blackstrap molasses daily. (I know, because I suffered for five days before researching withdrawal symptoms. I then took a tablespoon of molasses and felt great within ten minutes.)
*I cannot attribute all of these results to being wheat-free, as I have also been taking, and plan to continue taking, molasses.
