I fry everything with the regular light tasting olive oil. Don't use extra-virgin to fry with. It can't take as high a heat and it will give it that olive oil taste.
I also fry with extra virgin coconut oil.
You can also use both in baking. The light tasting regular olive oil has no taste. I have not used cocconut oil for baking, but I hear it is good. I think it would be good with certain cake recipes.
