Came home this evening prepared to start the Andouille making this weekend. Made some two weeks ago and sold all of it for $8.00 per pound. All of my BMW motorcyclist customers wanted more. Lol!
Now to the interesting part! When I Google'd Ghost Pepper Andouille what came up first of all was the Daily Paul. Damn, Guess I am the first to come up with this combination.
I must tell you that I have come up with the first combination of seasonings to make a good ghost pepper Andouille. Not too hot. Makes the nose run but doesn't make you sweat. The smokey flavor of the peppers along with the hickory or especially the Pecan smoke makes this especially enjoyable.
Just wanted to let you all know that I found this search to be most gratifying.
Michael, I thank you for this. I have several customers asking me to do this commercially. Don't really know if I can make it profitable but between my dry seasonings and maybe the Andouille it could be good. Who knows but, I will send you a pound if you will send me your address.
Intend to meet Jefferson in the fall with Andouille flying off the back of my bike riding through Texas hill country. Can't wait. Promised a wonderful Jambalaya or Gumbo. I promise to give the best he has ever tasted. Will be competing again in November in a gumbo cook-off. Took first in 2012 but did not cook last year. This year I will cook my Andouille and shrimp for the seafood completion. Will cook the Chicken and Andouille part in recognition of my partner and good friend. He thought that was my best but I always thought any Cajun can make chicken and sausage/Andouille gumbo.
Think I'll try to win that one for him.
