i've heard alot of people talk about canning...We don't do this in the south, does anybody know any good books on this subject so I can learn?
The food dehydrator I got is so-so...I don't like how alot of things taste rehydrated...Different texture, it seems...So canning might be better.

have a book for sale wherever they sell the canning jars. If you intend to can vegetables, it important to have a pressure cooker to attain a high enough heat to kill botulism organisms.
Canning fruit is easy and safe as fruit is acid. A few years ago they said to add 1 teaspoon of vinegar to each quart of tomatoes because the newer varieties weren't acid enough.
You can also pickle vegetables safely-----pickled beets, cukes, etc.
Canning used to be one of my favorite chores---I think because it was one thing I did that Lasted awhile---pretty jars of canned peaches and pears on the shelves---very satisfying!
Unlike baking a large batch of cookies and having them disappear in a day! My mom-in-law and I agree that one almost got some satisfaction when we baked a batch of cookies that no one liked---and therefore they lasted a few more days before we had to bake again!
The sad fact is a lot of people have adjusted their lifestyle as much as is possible. I for one would love to invest in gold. Unfortunately food and a roof over my head seems to consume all I have. And I live in a very modest home that I still owe almost 50k. I have no clue as to its value and doubt that it would sell right now anyway. If I were to sell and have a little cash, I would try to buy a few acres and put a travel trailer or small motor home there for my home. (maybe I could do a little hemp farming there? lol) Hopefully I could become independant from most material products and food items I now have to pay for. I have a 6 yr old car that is paid for. Sadly so many of us "working" class are so strapped by higher prices for everything, we can not cut back anymore than we already have. :-(
