An Idea of Mine on Canning.

Other people may have said this, but I've never read it anywhere before.

The superior seal of the Mason Jar enables canned fruits and vegetables to last 4-5 years under proper conditions.

Imagine what sort of results sealed Mason jars could get with storage of hard wheat, bismati rice, or dried pinto beans? All these will last for years without even being hermetically sealed.

Actually wheat beans a rice

Actually wheat beans a rice will keep for many years in sealed buckets or number ten cans so you can can more at a time. Oxygen absorbers wrok well too.

Safety for canned food

Keep everything clean, boil your rings and jars, don't reuse the lids. I pressure can everything I don't do any water bath canning. If it doesn't seal after it cools, put it in the fridge and eat it within a reasonable time.

We eat stuff I canned that is 5-6 years old, I open it and smell it, look at it, if it looks or smells bad it gets thrown out, if not I boil it for 5-10 minutes and eat it.

been canning for along time

the best beginner book is "Ball Canning Book"
runs around $5.00 has everything you need to know in there.

It's a starter then you go from there
has recipes for almost every fruit and veggie
how to use canners/pressure cookers and other gadgets

I canned over 300 quarts (for 2 of us) since Aug. should be set for a yr
also have froze a whole freezer full of veggies
and dehydrated alot of fruits & herbs

Another good place to look for canning and storing is the Mormons...I have been watching the BYU channel whenever I can, and every once in a while they have a show on Emergency Preparedness and they teach you how to can and store beans, rice, etc..and the recipes for those items. They also have a DVD for this same information if anyone is interested..

I also put a link on here earlier to what I think is the most "MUST HAVE" book for the coming times...it covers canning, dehydrating, smoke houses, root cellars, making soaps...the list goes on and on..if you would want to do it, raise it, kill it, eat it, build it, whatever, this is the book for you...I paid twenty bucks at hastings, but it is at Amazon much cheaper..Please my friends, if there is any book that you buy please, please buy this book...
