Food Advice
as in....I NEED food advice
I'm completely gun-ho about getting stocked up on the "essentials". Essentials as in food, guns and silver. But I need some advice from those that know....
I'm running a tight budget here and I was wondering if you all had any recommendations regarding stocking up on food and/or what types. So far I've got Berkey water filter, 2-3 hundred pounds of rice, dry staples like pasta and flour, etc. A large #10 size can of non-hybrid garden seed and other than that just large assorted canned goods. We shot 3 deer this season, so the freezer is stocked. I just want to know what else I can do to prepare myself. I've been buying what I can here and there at Costco, and I understand that shelf-life is my main enemy here. But I just currently don't have the thousands of dollars to be spending on some of these year-supply food packages that last 15-20 years...

Fish!
You can smoke and can most fish. Once canned the shelf life is decades, until it is opened. The same for fruits and veggies. Canning food is not a complicated. Just remember to make sure the lids sealed after removing jars from pressure cooker and cooled.

Make sure your staples are sealed correctly
so they can be stored for many years. All the rice, wheat, and pasta in the world won't matter a hill of beans if bugs and moisture can get into the package.
Either buy in pre-sealed cans that are of an appropriate size to use up in a decent time frame, or buy the appropriate cans and lids and moisture absorbtion packets, or whatever other method you can do to keep pest and moisture out of your food.

I have a kitchen garden and grow my own lettuce, tomato, peppers and now just starting strawberries. What I have discovered is that indoor gardens are very different than outdoor gardens. As much as I love organic everything, I had to use hybrid seeds for the tomato and strawberries. I had a cherry tomato plant in my kitchen garden that caused a hostile take over and choked out my lettuce!!! I feel that hybrids aren't that bad since they are just a cross of 2 species. I will never use GMO seeds but hybrids for indoor gardens are a must for some veggies, except for lettuces and herbs.

I just bought a case
Of canning lids. My garden won't mean a thing if I cant preserve it. I saved a ton of money and will have 60 packs in the house when I need them and in case TSHTF.
Its a good feeling.

Can left/plan overs
Bulk processing can be defeating. On my stove remains a large pot that I boil a jar or two and fill with left and planned left over foods. I use the remaining hot water to pour over my washed dishes and utinsils. I find this practice is more conveinient than buying plastic bags and containers which don't preserve food well. I also dehydrate foods as some planned left overs are made into Jerky or fruit wraps or vegetable chips. I only dehydrate on clear days. I liked your tip, and I think it's right on! I hope you like mine and give it a try.

I did the same thing - don't forget Generator
this year for the same reason.
A MUST have is a generator and some stored gas - you'll want to rotate the cans of gas as I think condensation will add a little water and/or it just gets old.
The frozen food is no good without it, thus a MUST have...
Fuel
Generators burn one to two gallons of gas an hour, though; seems like you could only depend on having enough fuel for a couple of days. I'd love to find a good solar solution.
I bought a kit
It has 4 panels. It charges a deep cell marine battery. I have a power invertor. I haven't used it enough yet but it is supposed to run a sump pump or a computer, lights alot of small appliances. They even have solar generators. There are some excellent survival threads on this site.

Wheat, Beans, Rice

Who cares what you are eating if you are forced to use your stock. Don't waste your money on fancy crap and MRE's.
You can also make some tasty means out of beans and rice as long as you replenish your reserves.
Ditto with Wheat, grind that up and make some nutritional bread without all the crap they put in it in the stores. It is rewarding and only takes a few minutes a day.
See if you can find a local wheat farmer and buy from the source. It'll save you a bundle. $200 can easily get you a years supply and offer you peace of mind.
If famine or supply infrastructure collapses, that wheat will be as good as gold.
Beans and Wheat can store 30+ years maintaining their nutritional value.
Coconut milk is a great
Coconut milk is a great substitute for cows milk. I purchase coconut milk by the case at Whole Foods. I use it in everything that normally takes milk, like cream soups or when I make rice, I use coconut milk and water. You can't substitute coconut milk for whipping cream, but other than that, it works great. It is very nutritious for younger children due to the high content of lauric acid, which also helps to fight off viruses.

It sounds like you got almost everything in the food category except fresh greens. I have a kitchen garden (year round) which I grow lettuce, tomatoes, and peppers. The lights will be on the website by the 18th of December. You won't need them right away even if you get your kitchen garden now, since the seeds will need time to germinate.
I have found that strawberry seeds need to be placed in the dark for about a week to get them to germinate. I had them in the kitchen garden with light and nothing happened. Then I put them in rockwool soaked with the plant food solution into a baggy placed in a dark cupboard. A few days later I could see just the tiniest little sprout. I think in a week or 2 I'll be able to put them in the kitchen garden with light.

The only electricity that it takes for it to work, is a timer and a submersible small pump. I would think a solar panel could make plenty of energy to make that little pump and timer work if you don't have power.

Can't be done
You CANNOT store enough food for you and your family and friends to live on until this thing is over. Great Depression One lasted over a decade. Can you store ten years worth of food for each person that will be looking to you for help? No? Then you had better start thinking along different lines.
My advice: once you have six months worth of food on hand (and it sounds like you do) you need to start acquiring the tools, skills, and materials that will allow you to make a living in the post-collapse economy. Or acquire the tools and skills you will need to extract food and energy from your local environment permanently and in quantity. And I don't mean shooting game. A year after the bad stuff hits, the game will be GONE. Maybe if you are a GREAT hunter, you will be getting game a bit longer than the guy with no experience. But there are thousands of experieinced hunters out there and they are going to scour the hills. So forget it.
Make friends with some local farmers and try to figure out what they will be willing to trade their produce for. If you live by the ocean, get a boat and equipment for extracting food from the ocean. If you have some land, plant an orchard. Use your brain and think LONG term.
