I had nachos

Corn chips covered in faux taco "meat" (I'm in the process of returning to vegetarianism), topped with "queso" (processed cheese melted with canned Ro-Tel tomatoes) and spiced up with a few pickled jalapeno slices. It was much better than it sounds and went well with beer and football.

Cabbage and ground Turkey casserolle

Fresh picked from my garden... not the turkey haha

Cabbage, bell peppers ,onions , roma tomatos
celantro ,seranno peppers (dried and crushed).

layered from bottom up...
Cabbage shreds,
cooked Ground turkey
(mixed in onions/bell peppers when meat half cooked),
home made tomato sauce,

cabbage shreds,

Nothing

Try this character-building recipe: Go to bed without eating. I do it once in awhile when I'm really, really tired (stayed up too late on DP!) so I can't claim it was strength of character in my case. I do know that it will not hurt you and may be better for your health. Do you know that they don't feed many zoo animals one day out of the week? It keeps them more active and interested in life.

Just think, there are people all over the world who go to bed without eating. Some haven't eaten all day. You don't want to be one of the many who panic because they miss a few meals when TSHTF. I mean it's perfectly OK to miss a meal for most people. You don't need to feel sorry for yourself or feel deprived. Just have the attitude that it's OK and you'll be fine with it. Try it, you'll see.

New Hampshire and Ecuador

I had this last night...

I love Peking ravioli, so anything dumpling-like is yummy! I bought some ground chicken, a package of prepared wonton wrappers (from the refrigerated veggies cooler) and assembled about 40 small dumplings, spiced with cajun seasoning, Italian seasoning, and s&p. I also had a bag of frozen raw, tail-on shrimp (31-40 size) I sauteed some of the shrimp with the same seasonings, and pan-fried/woked/steamed the dumplings (they literally took three minutes to cook) and had made a sauce from a can of diced tomatoes and a can of plain tomato sauce, a few minced garlic cloves, half an onion, and the same seasonings again. The wonton wrappers acted as the pasta for chicken dumplings and shrimp in red sauce! Yum!

how about some cheap ass economy gravy and spuds

boil some water , put in a half pack of cut up hot dogs two cubes of beef boullion and when the hot dogs get plump and look like little flying saucers add a bit of flour to thicken and pour it all on your taters :) mashed taters that is ...........

It's cheap and you will be surprized how good it tastes :) The kids will love it .........guaranteed.....

Split Pea soup!

Take that 2lb. meaty ham bone from Christmas dinner and put it in a large pot. Add 3 quarts water (or water/broth combo), 3 cups dried peas (rinsed, not soaked), one chopped onion, 2 teaspoons of minced garlic. Bring to boil, then reduce to low simmer. Cover and simmer over low heat for about 1.5 hours. Stir occasionally to prevent the peas from sinking and burning on the bottom of the pot.

After 1 hour of the soup simmering, prepare:
5 carrots sliced into rounds about 1/4" thick.
4 potatoes cubed into pieces about 1/3" square. Set aside.

After about 1.5 hours, when the peas are a thick mush, remove the ham bone from the pot and set aside on platter. Add carrots & potatoes to pot. Re-cover and continue to simmer on low.

Remove meat from ham bone in chunks (fairly labor-intensive) & put the meat back into the pot. Add a bay leaf or 2, a dash of thyme, a dash of white pepper & black pepper to taste.

Simmer on low, covered, for additional 30-60 minutes. Taste soup before adding additional salt (depends on your ham and broth saltiness).
---
Substitute beef/chicken/vegetable broth for some of the water, depending on taste. Soup may want additional liquid added during the last simmer period, depending on strength of flavors and thickness desired. This recipe makes a thick, hearty pea soup. :) Serve with a crusty bread or croutons.

Makes enough for 8 hungry people plus leftovers.
