--Just For Fun-- Anyone have any favorite recipes? (from simple to complex .. have at it!)

Since there is a wide range of people here from single college people..to married couples ... to bachelor's/bachelorette's ... etc..
I Figured there must be some gourmet cooks in the DP crowd... (or not) Please feel free to post your most lavish recipe...as well as some nice simple recipes..for those of us who burn our cheerios! :)

(And no.. this post has nothing to do with the Militia, 2nd amendment, the Ursurper in "office", or any other relevant topic..)

The best burger ever

Very simple recipy for the best burger ever. This recipy has been handed down for three generations.

You will need a pound of 80-85% lean ground beef, not pattied. You absolutely can NOT use anything with less fat than that because it will not cook properly.

Heat your grill to medium. It is important that it isn't too hot because you will wreck the burger if it is cooked to fast.

While the grill heats up, cut the pound in thirds. Each third will be one patty. Compress it into a ball, and roll it around a bit. Then place it on a cutting tray and flatten it into a circular shape. It should be about an inch thick (about the width of your thumb). Lightly salt and pepper one side.

Place the patties on the grill with the salt and peppered side up. When the sides are grey, flip the patty. Then, put a little salt and pepper on the now up side. At this time, you may add on cheese if you wish. Wait about two minutes or until little juice remains. The patties should slide off the grill easily. If they stick, they need a little more time.

With any luck, you now have an awesome tasting medium-rare burger. Then, add topings to your individual burger as you wish.

The most important rule to follow when making a burger is that you must NEVER EVER put anything INSIDE the meat prior to or during cooking!!! There is nothing worse than taking a bite out of a burger and finding that the cook put something in it. Burgers are meant to be a customizable meal, like pizza. You as an individual have the right to put whatever the hell you want on, under, or around you own burger, but you may NEVER put something inside someone else's burger (remind you of a particular philosophy we follow?).

Great recipe well written

I can't write, but I can, and do, read... so now I'm going to tell you, I agree with everything BUT all the meat handling! What I do is unfold the meat... I gentley unfold the meat into portions. It's really easy... you can unfold a pound into two three of four portions depending on the size of the grind, the smaller the grind, the smaller the portion.. The meat, as you know, shrinks when cooked, and while some burgers may be more square than others, or some a little bigger or smaller, they are so good from not being handled,.. it's the secret and you know it. Try unfolding packaged ground beef next time... I bet you agree.

Tilapia (or other mild fish)

Lay tilapia fillets (about 5-6) on the bottom of a square (9x9) pan; add one large and one medium can of diced tomatoes ; sprinkle one tablespoon lemon over fish/tomatoes; thinly slice or grate about 12 oz. of cheese (I like sharp and colby-jack mixture) and place cheese over the tomatoes and fish. Add salt (I use gray seasalt) and pepper to taste. Bake at 350 for about 1 1/2 hr.
It's very tasty.... Oops, forgot an ingredient...and I am NOT KIDDING! When I remember to add love, the meal is always a success...REALLY!
Also this is a personal preference--you can bake the fish covered or uncovered ...I generally cover it about 45 minutes then let it finish cooking uncovered so the cheese browns...

Depression lunch

find an abandoned house in a dilapidated area. Search through the basement and garage and look for droppings. Okay you are on the right track now look for holes in the walls and wait with a piece of two by four or anything else you can use as a club, when the rat sticks his head out beat the thing senseless . Take your kill home to your box under the overpass where your wife and kids are waiting. cook the beast over the open fire you have started in the 45 gallon drum that you use to keep warm and season it with the free sauces that you stole from wendy's . Get a hand full of dandelions for salad from someones lawn and any type of berries or nuts you can find in local trees . serve with anger and make sure you say grace.

Don't think this can happen ? Keep yourselves ready for it. stock up !

roast possum

Roast Possum with Spiced Apples and Sweet Potatoes

Flour
Salt and freshly ground black pepper
1 tsp Thyme
1 Possum; dressed, washed, and patted dry
1/2 c Red wine
1 1/4 c Water
4 Sweet potatoes; pared and split lengthwise
4 Apples; pared, cored, and halved
1 c Brown sugar
1/2 tsp Allspice
3/4 tsp Ground cinnamon
1/2 tsp Nutmeg

Mix flour, salt, pepper, and thyme and rub inside and outside the animal.
Place on rack in roasting pan. Add the wine and water, cover tightly, and
roast in a preheated 350 degree oven for about an hour. Pour off all but a
cup of the liquid. Lay the sweet potatoes in the pan, cover, and continue
roasting 45 minutes. Now lay in the cored and halved apples amid the sweet
potatoes and sprinkle both fruit and vegetables with a mixture of the sugar
and the spices. Continue to roast, with the roaster now uncovered, for
another 30 minutes, or until the possum is tender.

There you have it! A delicious recipe that uses your natural backyard resources!

Cheapo survival snack

These taste really great, believe it or not. My teenage children were grossed out that I was making them, and then proceeded to eat the whole plate of them.

Pick dandelion flowers from a non-herbicided/pesticided lawn. Use just the flower heads. Dip the flower heads in beaten eggs, then in flour with salt and pepper added to taste. Fry in 1/2 inch of coconut oil, or oil of your choice. They taste almost like fried oysters.

I do this with squash flowers... olive oil. It's WONFERFUL and you can stuff them too...

Easy cheesecake

Buy one of the prepared graham cracker pie crusts.
Mix 2 packagages of softened Philadephia cream cheese with
1/2 Cup of sugar and
1/2 tsp vanilla extract
Mix in two eggs, one at a time
Pour into pie crust.
Put foil around the base of the pan, place the pie into a cake
pan and add water to the pan.
Bake for one hour at 325F.

You can blend in 1/2 cup of mini chocolate chips if you want or top the cheesecake with fruit.

I make this all the time and

Shrimp creole

4 tbsp butter
1 1/2 cup chopped onion
1 cup chopped green onion
1 cup chopped celery
-saute together-

3 cans 8oz tomatoe sauce
1 cup water
1 tbsp parsley flakes
1 tsp salt
1/8 tsp cayenne pepper(for yankees, more if you're cajon or Mexican)
2 bay leaves
1 lb of shrimp

-combine all and let it simmer-

serve over hot rice, with crackers

Garlic..add minced garlic to your saute..

and equal tbsp. flour to butter but don't brown...this will thicken your gravy..and two thin slices of lemon for kick when it comes to a boil. Over rice..nix the crackers...unless you're not from Louisiana. :-)..

What to do with all those eggs

I LOVE this recipe:
Preheat oven to 425

In a good sized pot, bring to a boil:
1 cup water
1/2 cup butter

Dump in, all at once:
1 cup flour
1/4 teaspoon salt

Using wooden spoon, stir vigorously until it forms a ball, it happens pretty fast. Remove from heat.
Add, 1 at a time and blending well after each:
4 eggs

Drop tablespoonfuls onto ungreased cookie sheet. Bake about 20 minutes, until top is golden brown.

Just like they are, hot out of the oven they are like a popover except these will not collapse every friggin' time... Served hot with butter they are my family's absolute favorite thing with soup.

Or, make a pudding or custard to fill the shells, refrigerate them and you have cream puffs.

Now when I make them I freeze a few as teething toys for my favorite little, short person.

Truth exists, and it deserves to be cherished.
