The best way to think about any food is:

Did we have it available or eat it 20 000 years ago?
If not then its probably not good for us.

The mass farming of wheat and its products started 10 000 years ago and research shows that the people who ate it everyday died much earlier then their hunter and gatherer ancestors.
Wheat helped us to feed all the people who build larger communities and then citys but in the long run it didnt help our health.

Our body can convert pretty much everything but thrives only on the natural diet that helped us survive for thosuands of years before we started to industrialize our food.
