I love cast iron, but induction is not instant.

gas is.

It is on or off, and at whatever level you want.

induction still can't instantaneously reach "high" or reduce to "low" like gas can.

I'll agree though that it is more efficient in that heat is not lost to the air or surrounding elements like with gas.

I'll take gas any day over electric.

And if possible, with the right style of cooking, i'd prefer open flame. (where you don't need instant control, but where you get more flavor than you can from electric)
