I wonder if your soaking in water was necessary, because this type of sheep should not have a gamy taste to it. I read on line it is a little bland to other types of meat, so it needs more spicing.
Also for your future reference these hair sheep types are more lean than others, they are recommended to be raised solely on grass and hay. Reason being they put on fat around the organs instead of in the meat, you can't tell when they get too fat.
