The liver filters and eliminates toxins from the body by breaking them down very quickly into harmless component molecules. It isn't some reservoir that stores poisons for days/weeks/years.
Liver is a huge source of vitamins and fats that you don't get in normal cuts of muscle. I love it smothered in caramelized onions! If you can't stand liver direct, try it in a pate. It's irresistible and very healthy.
