Carbon dating is

just one of the tests that can be preformed. There are other elements they know the decay rate of that can also be tested. In addition they can estimate the age by the depth the artefact was found at. Deeper is assumed to be older, altho that isn't always true.

And to further confuse the issue, wouldn't an ice age pretty well destroy even our civilisation? What would be left of our "great" cities in only 100 million years after an ice age ploughed them under?
