The Granger's Saint Patrick's Day Lamb Stew
In a crock pot, set on high:
Leg of Lamb, larded with bacon, rosemary, garlic, sea salt and pepper
6 pack Guinness
cook overnight, in morning, cool to debone and cut into 1" chunks
Reserve broth, remove fat
Return to empty crock pot, set high, adding:
2 course chopped onions, carrots and potatoes
2 large cans whole plum tomatoes
cook 6 hours (should be ready for lunch)
add broth to taste or consistancy if needed
can also add additional Guinness to taste.
Serve with crusty soda or Irish bread and Kerrygold Butter and more Guinness.
