But, in Jesus' time, the wheat had much less gluten than that of today. In the 1970s they developed a hybridized, more productive, dwarf strain of wheat that is grown exclusively today in North America and much of the rest of the world. This dwarf strain of wheat has much more gluten than any of the strains of the past. So if Jesus showed up today it is likely that our modern wheat would wreck his gut as it does to so many of us these days.
