Check out Gary Taubes book, "What if it's all been a big fat lie". He goes into detail about how storing fat in the adipose tissue is a hormonal response to foods consumed and NOT a result of consuming more calories than you burn. The caloric balance theory is flawed on many levels. When you consume carbs your body releases insulin- a hormone which tells your body to store fat. If the body worked like an engine (caloric balance) why do some people get fatter than others who consume the same food?
