The article linked here ultimately comes from Chris Kessler's site (I tracked it to chriskessler.com). This person has written and is currently marketing their paleo diet book which makes use of pork products. The information he offers as "evidence" is that there is no *solid* facts incriminating nitrates/nitrites... so cherry picking studies and ignoring other studies can easily present a "lack of evidence" for a case against nitrates/nitrites.

It is commonly held that absence of evidence does not constitute evidence of absence. Maybe Chris Kessler hasn't heard of this rule of thumb which will just happen to net him some extra sales on his nitrate-rich paleo book.

The scene from Pulp Fiction keeps coming to mind: I'm not jewish, I just don't like swine, they're filthy creatures that disregard their own feces.
