Some substitutes are okay, but there are too many misses and it just makes you miss gluten more. It's better to eat the things you already like, then when you re-approach the other foods, you go slowly and don't get your hopes too high.

Bread can't be the same, but Udi's would hold a sandwich together not too offensively if you wait about a year to forget how it's supposed to taste a little bit.
