Comment: Healthy?

Depends on what you consider healthy, really. I lean more towards what will keep me from snacking before lunch. A simple favorite of mine is a quick omelette.

-Scramble three eggs with a splash of milk but do not season; make sure to work in some air to fluff
-Dice some onion and bell pepper and saute lightly in butter
-After about two minutes pour the eggs over the veggies and turn the heat DOWN; low to medium low
-Add salt and pepper to taste
-Cook slowly until the edges firm up and a film forms on top
-Flip the omelette
-Add your favorite cheeses to one half the omelete and then fold over
-Cook one minute over low heat, turn off the burner, flip the omelette
-Cook one minute more and plate
-Let sit for one to two minutes and enjoy with orange juice or freshly ground coffee - DO NOT DRINK FOLGERS!
