Ideas are expressed with labels. The labels do matter. Words matter--they're tools used for communication. A label such as "anarchy" carries certain popular associations which are, on the whole, negative, and rather than jibe with this common understanding of the word, "anarcho-capitalists" try to fly in the face of it and redefine the term to make it something positive. I'm not suggesting that this is particularly wrong, I just think it is unwise if the goal is to spread the message about the structure of a peaceful and prosperous society.
