wonder if this will be deleted as its a little off topic, just read another thread by lisa talking about cooking black eyed peas and it reminded me of some thoughts ive had for a while,,i have a very large family ,many mouths to feed.with the economy on a nose dive and food rationing in our future i often think of ways to feed many people with few ingredients ,little money with the most nutrition.one i came up with is rice and bean soup,, soak beans overnite cook several hours over low heat,,add enough water to make lots of broth add rice to desired consistency,i would also throw in some vegetable or chicken boulion and any fresh vegetables i had at the end of cooking(the less you cook vegetables, the more nutrients they hold) you could feed A LOT of people with a one pound bag of beans and a two pound bag of rice.

There is no imminent depression on the horizon, thanks to the Fed increasing the money supply. There is a a tradoff, though, which is increased inflation. But, that's preferable to a depression. Eventually a recession will be induced in order to scale back the inflation if it's too excessive.
The mistake that the Fed made back in the 1920's which brought on the Great Depression is that they didn't increase the money supply. See Milton Friedman's writings for an explanation. Bernanke astutely knew not to repeat the same mistake.
The purpose of derivatives is to hedge risk. Derivatives are exactly what prevents economic calamities. Most of those who lose money trading in derivatives are speculators. Risk is diversified and spread out, thanks to derivatives.

When my dad died she got a 200.00 "death benefit." She lost his 1600.00 a month social "security" income for the rest of *her* life though. Even though they both paid in *all their lives* (as will we) and he died at 66 years old. The dollar has been slowly diluted for the last hundred years. That doesn't cause depressions. Read all the free market economists who have analyzed the Great Depression. It was brought on by an international tarrif war, the Federal Reserve contracting the money supply, and the New Deal.
Bernanke is simply a guy doing his job. He has to use the only tools given to him. We don't have a free market money system. We have a central banking system. SOMEONE has to take the job. It might as well be someone who knows what he's doing.

10 cents' worth of oatmeal a day.
I've bought a lot of large 42-oz. containers of store-brand "quick oats" ($1.50 each) for the depression ;-) I had been eating cold cereal flakes every morning but have now switched over to rolled oats and cook up about 10 cents' worth every morning, way less costly than my cold cereal. Of course there are other costs: electricity to cook, 10 cents' worth of raisins that I soak overnight, 5 cents for a dollop of honey, and the big cost, probably 30 cents for soy milk. Add in my morning mug of coffee/green tea, also containing soy milk, and I figure I'm down for a buck or so every morning.

OK well this was originally supposed to reply to LG's post, but started a new one... so I guess I'll contribute. Pasta's always a staple, though fattening as hell in large quantities. If you have kids around, you can make funnel cakes (if you drain them adequately they work great and don't hold much oil) as a treat... all it takes is flour, butter, water, sugar, salt, and some oil to fry them in. Pancakes are another good one and if you thin out the batter you can make crepes to hold berries (they're starting to show up in fields near you) or whipped cream. Soup is a good idea, though making a broth out of the beans isn't the best idea I've heard. If you buy chicken *on the bone* it is not very pricey, plus a lot of times butchers will give you free "fat" from any random animal. If you render this, you will have flavoring for your soup. If you make the chicken and then boil down the bones, you'll have a much more flavorful broth.
Potatoes make french fries (these can be baked), baked potatoes, hashed browns, mashed potatoes, etc. and the potatoes here are like $4 for a 5 pound bag.
Corn will be around, and plentiful, soon. It's great grilled, baked, creamed, or even boiled (toss it in with that soup). Corn, sour cream, salsa, and rice make a hideous yet delicious combination :P
As for spices... they're great but if you're out of them and you don't have money to buy more, then you're stuck. They're expensive, LG, and this is about stretching your food dollar, not about making a "restaurant quality" meal.
I'm not so sure I'm going to be too worried about pasta
making me fat during the depression.
Americans tend to eat portions of pasta that are too large, add sauces that contain high fructose corn syrup, and overcook their pasta leading to an immediate blood-sugar spike.
Pasta is meant to be cooked "al dente" (slightly chewy). You fill fuller faster and it takes longer to digest.

My point about fattening is more about "empty carbs". In other words, you can get some "bang for your buck" out of other materials. Having said that, a box of pasta is $0.88 here, and that's a couple of days' worth of food right there. I always cook al dente, and the salt from the water is usually enough flavor (though a little butter is also nice from time to time).
I don't sauce my pasta, and haven't in a long time. Sometimes I'll chop up some veggies if they're around, things like zucchini or tomato all cubed up make their own sort of "sauce" I suppose, but never store-bought jar sauce. I saw a jar the other day for $10! People are just ridiculous. :(

uses lots of rice and tomato. Yum. I've also heard of recipes that use mashed beans in cookies and breads. One of my friends swears by an oatmeal cookie recipe he uses that calls for beans. I think the beans possibly replace some or all of the butter but I 'm not sure. I'll have to ask him for it and see if I agree with him... :-)

The following site has tons of timesaving "mix" recipes (using basics like salt, sugar, powdered milk, cornstarch, flour, dried onion, dried garlic, pasta) - including homemade "burger helper" - that you make yourself. I have made the burger helper recipe and can vouch that it's very good and equally "fast" to prepare. Be sure to check out the rest of the site, as it contains all kinds of info.

I also use a dehydrator extensively to preserve everything.
For example, this past weekend, the produce market had bags of spinach on sale for 79 cents. I dehydrated 4 bags (which filled 6 single quart canning jars) that I then sealed with a vacuum jar sealer.
To use the spinach, I soak it in cold water (1/2 cup spinach to 1 cup water) for about 20 minutes - then place on the stove and boil. It's way better tasting than canned, and still contains 80% of the nutrients. Dehydrating preserves about the same nutrient content as fresh-freezing, whereas canning destroys 80% of the nutrients due to the high temperatures involved.
As a result of dehydrating, none of my veggies rot in the fridge. I also use my dehydrator to thaw meat, and to raise bread.
Another money saver is to use whole grains directly, for example, I boil hard wheat or whole oats and place in a thermos over night (google "thermos cooking"). It makes a good hot breakfast cereal with raisins and brown sugar (and dehydrated apple chips).
