I currently have a gmail account, but reading all this about Google I want to close it. Who is the "safest" email provider? I have one through Verizon, should I just use that??

There is no "safest"
If you have any company manage your email, then that business has the potential to compromise it at any time. There are only "levels" of safeness you could consider. For example, the next level away from using Gmail is to run your own mail server. The easiest way (but not safest) to do that is to sign up for hosting service with some provider. Their business is to let you use their computers, not to directly provide email service, but there again they have all of the hardware with your information sitting in front of them. Safer than that would be to run your on mail server on your own computer hardware. This could be done on the computer you are sitting at now or by renting rack space somewhere else. This is as safe as you can get, but the problem is that Internet data travels through telecom pipes - the pipes that Bush illegally ordered to be monitored, and which congress just gave retroactive immunity to the telecoms for.
